Podders, today we have a truly special guest on hand that's eating up the food industry right now, Masterchef 2020 winner - Emelia Jackson!
She's had quite the successful year despite the pandemic. Not only has she launched two highly successful cooking businesses, Friday Feels cake delivery and Financier Cake Premix, she's also a new mum and Vegepodder! She does it all.
Below she's created an incredible cabbage-based Okonomiyaki recipe that re-invents our notions of what the humble vegetable can do. But first, here's a little from Emelia about the recipe and what you can do with it.
"Okonomiyaki (also known as Japanese pancake) is a simple, five ingredient recipe with Okonomiyaki flour base (the flour can be bought from Daiso or any Japanese supermarket). I love this dish because it's nutritious and can be topped up with any number of vegetables or meats that you want. Add garnishes such as sesame seeds, Japanese mayonnaise (Kewpie mayo) and fresh herbs from the Vegepod on top, and you've got an absolute flavour bomb of a dish that's so easy to make."
